One of the greatest challenges I have faced out on my own is cooking. In the past 6 months, I have discovered 3 key things about myself in the kitchen: 1. I really enjoy entertaining. 2. I love to try new recipes. 3. I am a crummy cook!
While numbers 1 and 2 are great, number 3 is a real kicker. I try, but in the words of my fiance..."it's just a little bland!" Since my basic dishes are seriously lacking in the "umph" department, I've discovered my decent skills are limited to spice-laden food like Mexican and Italian.
Lucky for me, my fiancee is a MASTER in the kitchen, and we've got a system going. I go grocery shopping and stick to the basics...like cutting things up. He does the stove and the spices, and somehow things come out edible!
When I do happen to find a dish where I've got some skill, I like to share! I love having friends over for dinner parties...and then faking like I cook that well all the time. This weekend my fiance is out of town for a guy's weekend, so rather than spend Saturday night with a Lean Cuisine, I decided to throw a Girl's Night In dinner party. My 12 closest friends are coming over for a fiesta and game night!
After 6 months experimenting, I have begun to master homemade pico de gallo and tortilla chips. It's simple, impressive, and DELICIOUS! Just chop up some green onions, peppers, cilantro, and tomatoes, squeeze over a lime, and BAM...just like Emeril!

Good for you! I wish I had started that system with my hubby years back! You are one smart cookie! By the way I also think that your fiancee is one lucky cookie!:)
